🏰 The 1988 Auguste Clape Cornas is a 【rare and profound offering from a benchmark producer of Northern Rhône Syrah】, showcasing the incredible aging potential and complexity of this legendary estate. Auguste Clape's Cornas is renowned for its powerful, gamey, and meaty flavors, with a full and opulent body. At this mature age, expect a captivating evolution of aromas, moving beyond primary fruit to reveal tertiary notes of leather, tobacco, forest floor, and dried fruit, characteristic of a well-aged Syrah.
🍴 This magnificent, mature Syrah demands hearty and flavorful dishes. It's an exceptional pairing for roasted leg of lamb with herbs, beef stew, or game meats. Consider rich, slow-cooked preparations that mirror the wine's depth, or hard, aged cheeses like Gruyère, Parmesan, or smoked Gouda. The wine's inherent spice and pepper notes will harmonize beautifully with dishes incorporating similar seasonings.
🥂 This is a wine for a truly special celebration, a connoisseur's dinner, or a moment to savor a piece of history. It's a testament to the longevity of great Cornas. For a wine of this venerable age, expect the cork and capsule to be fragile. Decanting is highly recommended to separate any sediment and allow the wine to gently open up, revealing its full, evolved bouquet. Serve carefully to fully appreciate its delicate complexity.
