FEATURES
🏰 The 1988 Chateau Guiraud Le Dauphin de Guiraud is a superb Sauternes vintage, offering 【remarkable complexity, depth, and exceptional aging potential】. This sweet white wine is known for its rich, unctuous, opulent, zesty, and beautifully balanced profile. Many bottles are drinking fantastically now, with the best capable of evolving further over decades. Expect a beautiful rich golden color, with a high, laser-like acidity that elegantly threads through a honeyed core of dried apricot and saffron, ensuring a crystalline and light feel despite its concentration. Tasting notes reveal complex aromas of exotic fruit, honey, orange, coconut, saffron, creme brulee, and dried apricots, leading to an elegant texture with notes of honey, syrup, and tangerine marmalade, culminating in a superb acidity and a long, honeyed finish. 🍴 This versatile Sauternes pairs exquisitely with foie gras, roasted chicken, veal, and pork dishes, especially those with a spicy or sweet touch. It's a fantastic match for spicy Asian cuisine, including Cantonese dim sum, roasted goose or pork, Hunan spicy chicken or fish with sesame topping, and mildly spicy Sichuan twice-cooked pork. Raw fish like sushi or sashimi, various shellfish such as lobster, crab, and oysters, and a selection of cheeses like Comté, Saint-Nectaire, and Roquefort also make excellent companions. 🥂 Perfect for a luxurious dinner, a special celebration, or a sophisticated cheese tasting. Its age and complexity make it an ideal choice for connoisseurs seeking a truly memorable experience. Serving: For a wine of this venerable age, handle with extreme care as the cork and capsule might be fragile; an Ah-So opener is recommended. Serve cellar-cool, not chilled, ideally between 10-15°C (50-59°F). A brief, gentle decant just before serving can help the saffron notes emerge and allow its full aromatic complexities to develop.
BACKGROUND
Château Guiraud is a wine estate in Sauternes, Bordeaux. It was classified as Premier Cru in the 1855 Classification and is one of the region's most famous wine estates. The château has around 85 hectares (210 acres) under vine, on sandy gravel and clay soils, which provide a good growing environment and through their moisture-retaining qualities, are conducive to the spread of Botrytis cinerea. Only grapes that have been affected by noble rot are picked by hand, and are fermented plot by plot in new oak barrels. After Château Guiraud reaches the desired level of sweetness, it is aged in barrel for at least 24 months before it is released.
