Ponsot, Gevrey Chambertin Cuvee Des L'abeilles, 2021
🏰 The 2021 Burgundy vintage was a challenging one, marked by spring frosts and mildew, resulting in lower yields. However, a sunny and dry autumn allowed for the production of nervy, aromatic dry wines. Domaine Ponsot's Gevrey-Chambertin Cuvée de l'Abeille 2021, whose name 'Cuvée de l'Abeille' (Cuvée of the Bee) honours the winery's sustainable viticulture, is described as a pure, elegant wine that is enjoyable even when young. It presents a deep ruby red colour with bright reflections. The nose is enveloped in aromas of red and black fruits like cherries, currants, and blackberries, complemented by delicate floral and spicy touches, subtle notes of damp earth, undergrowth, and a mineral hint. The palate offers a smooth and round entry with a velvety texture and well-integrated tannins, leading to a long and balanced finish with ripe fruit, soft spices, and a subtle touch of wood. 【Authentic and refined Gevrey-Chambertin, paying homage to nature with its 'Cuvée de l'Abeille' (Cuvée of the Bee) name.】
🍴 This elegant Gevrey-Chambertin is an excellent partner for red meats, especially game, as its evolving notes can complement gamey flavours. Consider pairing it with roasted duck breast, pan-seared venison, or a classic coq au vin. For an Eastern culinary experience, it would beautifully accompany a delicate Cantonese roast pigeon or a mushroom-based hotpot.
🥂 This wine is a refined choice for a dinner party, a special family meal, or an intimate gathering where a high-quality, expressive red Burgundy is appreciated. Its elegance allows for enjoyment in its youth, but it also possesses the structure to evolve gracefully with further cellaring.
