The 2021 vintage in Burgundy was challenging, marked by frost, but the high-altitude site of "Au Bout du Monde" (over 400 meters elevation) experienced delayed budbreak, which saved these vines from damage. Pierre-Yves Colin-Morey is known for his meticulous attention to detail, whole bunch pressing, native yeast fermentation, and aging on lees for up to 18 months in predominantly 350-liter barrels, eschewing lees stirring and filtration to produce wines designed for classic aging. The 2021 Hautes-Côtes de Beaune Blanc from PYCM features grapes from three parcels in the Hautes Côtes, named for a nearby nature preserve in Cormot-Vauchignon.
This beautifully expressive white Burgundy captures the charm and vitality of the Hautes Côtes de Beaune. The nose is bright and lifted, with fresh citrus notes of lemon zest and grapefruit mingling with hints of green apple and ripe pear. On the palate, it's equally lively—zesty citrus and orchard fruit flow seamlessly into more rounded stone fruit tones of white peach and apricot. A gentle mineral thread runs through, adding precision and reflecting the high-altitude terroir. It is medium-bodied with crisp acidity, vibrant, refreshing, and delightfully textured, with a clean, persistent, and mouthwatering finish leaving echoes of citrus and subtle flint.

This fresh and delicate white Burgundy is perfect with fine fish (grilled salmon, sole meunière), poultry in cream sauce, or vegetable risotto. It also pairs well with pâtés, terrines, potted meat, crab, steamed shrimp, seafood in sauce, baked fish, and raw fish. For cheeses, young Comté, Brie, or Coulommiers are excellent choices.
