FEATURES
🏰"The 1997 Chateau Lafaurie-Peyraguey is a Premier Cru Classe Sauternes that has been a consistent performer, exhibiting considerable botrytis and a thick, unctuously-textured style, now at perfect maturity." This superb 1997 exhibits considerable botrytis, as well as a thick, unctuously-textured style. The estate's vineyards are composed of silica-gravel and clay-gravel soils, planted to 93% Semillon, 6% Sauvignon Blanc, and 1% Muscadelle. The wines are aged in oak, of which around a third is new. Part of the chateau is now a luxury hotel with a Michelin starred restaurant. Displays gorgeous aromas of coconut, honeyed oranges, tangerines, pineapples, mangoes, and other tropical fruits. It is medium to full-bodied and super-rich, but not a blockbuster. Possesses low acidity and a long, 40-second finish. A rich, honeyed bouquet with touches of lanolin, beeswax and undergrowth, open and vibrant. The palate is medium-bodied, viscous on the entry, fat in the mouth with impressive tension and animation towards the finish, hints of bitter orange and marmalade.

A classic pairing with foie gras (terrine-style or pan-seared). Excellent with salty foods like prosciutto, or spicy dishes, especially those with ginger. Pairs well with roast chicken, shellfish (lobster, scallops), and fine fish in sauce. Adventurous pairings include spicy Thai food. Also complements blue-veined cheeses (Roquefort, Fourme d'Ambert, Stilton) and fruit-based desserts (apricots, peaches, apples) or creamy desserts like creme brulee.
