FEATURES
🏰 The 1999 Chateau Pavie represents a pivotal moment for this esteemed Saint-Emilion estate, being the first vintage under the new ownership of Gérard Perse, who initiated significant quality-enhancing investments. Despite 1999 being an unpredictable vintage in Bordeaux with September rains and hail, Pavie's adept winemaking resulted in a wine that Robert Parker Jr. hailed as a 【 candidate for "wine of the vintage" 】. This full-bodied Bordeaux blend pours a deep garnet to ruby-purple, offering a complex and evolving bouquet. Expect aromas of crushed minerals, smoke, licorice, and black currants, intertwined with notes of ripe blackberries, truffle, and tobacco. Further exploration reveals hints of Morello cherry, redcurrant, plum, baking spices, mocha, and even a touch of well-oiled leather. On the palate, it's rich and voluptuous, with a deep, mouth-filling texture and a harmonious balance of fruit and mellowed, fine-grained tannins. The finish is notably long and persistent. The 1999 Pavie is currently in a beautiful drinking window, with many experts suggesting it can be enjoyed now and for many years to come, potentially through 2049. It benefits greatly from a careful decant of several hours to allow its complex aromatics to fully unfold and to manage any sediment. 🍴 This magnificent wine is a superb partner for rich, savory dishes. Consider classic pairings such as roasted lamb, beef tartare, venison, or a hearty mutton chop. It also complements duck pâté, truffle-infused dishes, and mature hard cheeses beautifully. 🥂 Ideal for a celebratory dinner, a special anniversary, or a sophisticated gathering where a wine of profound character and history will be appreciated. Its maturity and complexity make it a focal point for any memorable event.
BACKGROUND
Chateau Pavie is a Bordeaux estate in Saint-Emilion known for its Merlot-dominant grand vin. It is one of four chateaux with the Premier Grand Cru Classe A status, the highest classification in Bordeaux's right bank. The 37-hectare (91-acre) Pavie estate sits on a limestone plateau on a site known to have been planted with vines since Roman times. The current property boundaries were heavily influenced by the land purchases of Ferdinand Bouffard in the late 19th century. Bouffard bought a number of vineyards and chateaux, laying the foundations not just for Pavie but several of its neighboring estates, although he continued to manage them as separate entities. In the early 20th century, Chateau Pavie was divided into three: chateaux Pavie Macquin and Pavie Decesse were created from land from the original estate. Pavie remains the largest of the three and is one of the largest estates in Saint-Emilion.
