FEATURES
🏰 The 1989 Napa Valley vintage began promisingly, but heavy rains and cloudy conditions in mid-September led to challenges, including Botrytis/grey rot in some areas. Producers who waited until October for clearer, drier weather generally fared better, though stringent grape selection was necessary. Despite these difficulties, some exciting Cabernet Sauvignons emerged from later-ripening, freer-draining hillside and mountain sites. Caymus Special Selection Cabernet Sauvignon 1989 is described as a tight, tough, and chewy wine, intense and tannic, yet graced with a wealth of fruit flavors. Rich cherry, berry, prune, and plum notes evolve into smoky and complex nuances on a long, full finish. It also presents big, layered aromatics of cherry, cassis, tobacco, and cedar, with a palate that opens with good acidity, medium-bodied fruit, soft melted tannins, and a dark chocolate note on the long finish. Some tasters have found it superb, elegant, and integrated, with resolved, silky tannins and cool, restrained fruit, suggesting it's at its apogee. 【 這款標誌性的納帕谷赤霞珠以其豐富的果味和複雜、煙燻的餘韻而聞名,具有顯著的陳年潛力 】.
🍴 Given its richness and complexity, this wine is a classic pairing for grilled or roasted red meats, especially prime cuts of beef or lamb. Hearty stews or aged hard cheeses would also be excellent companions.
🥂 For a wine of this age, careful handling is paramount. Older corks can be fragile, so consider using an Ah-So opener. While some notes suggest it's at its peak, others indicate it might be past its prime if not perfectly stored. Decanting is recommended to allow the wine to breathe and to separate any sediment, but do so gently and monitor its evolution closely, as very old wines can fade quickly. Serve at cellar temperature (around 16-18°C) in large Bordeaux glasses to appreciate its complex bouquet.
