🏰 A magnificent expression of Chardonnay from a highly-rated vintage, 【the 2000 Henri Boillot Chevalier Montrachet Grand Cru offers superb complexity, freshness, and proven aging potential】. The 2000 Burgundy white vintage was very good to excellent, yielding wines with good acidity, freshness, and a balance of citrus and mineral notes. Expect elegant notes of citrus, white flowers, hazelnut, and a strong mineral backbone, developing honeyed and nutty nuances with age.
🍴 This exquisite white Burgundy is a perfect match for rich seafood like lobster or scallops, turbot in a butter sauce, or roasted poultry with cream. It also complements foie gras and aged Comté cheese.
🥂 An exceptional wine for a connoisseur's cellar, a luxurious celebration, or a memorable gastronomic experience.
*Serving suggestion: Serve chilled, but not too cold, around 12-14°C. Decanting is generally not recommended for older white Burgundies to preserve their delicate aromatics, but a short aeration in the glass might be beneficial.*
BACKGROUND
Domaine Henri Boillot is a wine producer based in Meursault, France, is renowned for its red and white wines from Côtes de Beaune appellations. Chardonnay and Pinot Noir are the primary grape varieties featured. The estate was named Domaine Jean Boillot until 2005, but was changed when Henri Boillot bought out his siblings in order to distinguish it from his brother's new Domaine Jean-Marc Boillot. Henri had previously set up Maison Henri Boillot for négociant wines and retains these labels to distinguish them from estate wines.
