🏰 The 2007 Salvioni Brunello di Montalcino Cerbaiola is a 【pure, rapturous beauty and a magical Brunello in every way】, with only fewer than 1000 cases produced. This highly acclaimed Sangiovese from Tuscany is farmed from three different plots, undergoing strict pruning, natural fermentation, malolactic in steel, and 36 months of aging in large Slavonian oak barrels.
It presents a medium garnet color, offering an intense and complex aroma of cherry liqueur, dried strawberries, tobacco, mint, leather, smoky roses, and dried fallen leaves. Layers of sweet red fruit, rose petals, licorice, spices, and mint also emerge. On the palate, it's dark, rich, and enveloping, racing across with stunning depth and richness, showcasing the flamboyance and opulence of the year. It's concentrated, refined, and elegant with a lively structure, complex flavors of cherries in chocolate, floral and sweet tobacco, and smoke nuances, supported by high acidity and medium+ extra fine velvety tannins. Antonio Galloni rated it 96 points.
🍴 This superb, mature Brunello is excellent with traditional Tuscan dishes, roasted game, rich pasta with meat sauces, aged pecorino cheese, or grilled red meats.
🥂 An ideal choice for a celebratory Italian dinner, a special occasion, or a vertical tasting of fine Sangiovese. It requires at least a few hours of decanting as it continues to evolve and show new layers. Drink between 2016 and 2037. Serve at 16-18°C (60-64°F). Kindly check the cork and capsule carefully due to its age.
