FEATURES
🏰Francois Raveneau is one of Chablis' most legendary and sought-after producers, crafting 【exceptionally age-worthy Grand Cru Chablis】 that are benchmarks for purity, minerality, and complexity, making this 1999 Blanchot a rare and highly collectible bottle. The 1999 vintage in Chablis was generally considered a good to very good year, producing wines with ripeness and good acidity, suitable for aging. Blanchot is the southernmost of the seven Chablis Grand Cru vineyards, known for a lighter style with accentuated minerality due to its southeast-facing slope and slower ripening. Raveneau is known for traditional winemaking, often using older neutral oak for fermentation and aging, which contributes to texture and complexity without masking the terroir. At 27 years old, this Raveneau Blanchot Grand Cru would be showing significant tertiary development. Expect a complex bouquet of honey, toasted nuts, dried apricot, wet stones, and perhaps a hint of mushroom or truffle, alongside lingering citrus notes. The palate should be rich and textured, with a vibrant acidity that has softened beautifully over time, leading to a long, mineral-driven finish. The wine's finesse and tension, characteristic of Blanchot, would be elegantly preserved. 🍴 Mature Grand Cru Chablis pairs exquisitely with rich seafood preparations like grilled lobster, pan-seared scallops with beurre blanc, roasted turbot, or monkfish in cream sauce. It also complements roasted poultry with truffles, foie gras, veal in cream sauce, or aged, firm cheeses. 🥂 A truly special occasion, a milestone anniversary, or a dedicated tasting for serious Burgundy collectors. This is a wine to be revered and enjoyed with thoughtful company. Given its age, handle with extreme care. Stand the bottle upright for at least a week to allow any sediment to settle. Decant gently just before serving to remove sediment, but be prepared for the wine to evolve rapidly in the glass. A two-pronged cork puller or Durand is recommended for the potentially fragile cork. Serve slightly chilled, around 12-14°C (54-57°F), to allow its complex aromas to unfold.
