Francois Raveneau, Chablis Blanchot Grand Cru, 1997
🏰 Francois Raveneau is a legendary producer of Chablis, crafting some of the most profound and age-worthy expressions of Chardonnay, and this 1997 Chablis Blanchot Grand Cru is a 【rare and exquisite example of a mature, mineral-driven white Burgundy】. Blanchot is one of Chablis's esteemed Grand Cru vineyards. The 1997 vintage in Chablis was generally good, producing wines with sufficient ripeness and acidity to allow for graceful aging. Expect a mature Chablis profile with notes of dried white flowers, honey, wet stones, and a hint of mushroom, all underpinned by a lingering, complex minerality. The characteristic crisp acidity of young Chablis will have mellowed into a more integrated and sophisticated palate.
🍴 This elegant white wine is a superb match for delicate seafood, such as pan-seared scallops or grilled sole, poultry in a light cream sauce, or mature goat cheese.
🥂 Ideal for a sophisticated seafood dinner, a special anniversary celebration, or a contemplative tasting session for white Burgundy connoisseurs. For this 1997 Chablis, careful handling is paramount. Decanting is generally not recommended for older white wines as it can diminish delicate aromatic nuances. Serve slightly chilled, around 12-14°C (54-57°F). Always check the cork carefully due to the wine's age.
