🏰Vincent Dauvissat's Petit Chablis offers an exceptional purity and a true expression of Chablis' unique Kimmeridgian terroir, even at this entry-level designation. While specific vintage notes for 2021 are not widely available, Dauvissat is a legendary producer known for biodynamic practices and minimal intervention, crafting Chablis wines of great intensity and longevity. Expect classic Chablis characteristics: crisp acidity, vibrant 【citrus notes of lemon and green apple】, distinct 【wet stone minerality】, and a subtle hint of 【oyster shell】. This Petit Chablis, though typically fresher and more immediate, will possess remarkable depth and complexity for its category under Dauvissat's masterful hand.
🍴 An ideal partner for fresh oysters, raw seafood platters, grilled white fish, goat cheese salads, or light appetizers.
🥂 Perfect as an elegant aperitif, a refreshing accompaniment to a casual seafood lunch, or a crisp start to any summer meal.
BACKGROUND
Domaine Vincent Dauvissat is one of the most prestigious producers in the Chablis region of northern Burgundy. It is family owned and operated and has been selling wine under the family name since 1931. The domaine owns portions of land in two Grand Cru vineyards: Les Clos and Les Preuses. In addition, Dovesate also has four top vineyards: Séchet, Vaillons, Montmains and the acclaimed La Forêt (Dovesate is labeled "La Forest"), whose quality is comparable to that of grand cru in premium vintages.
