🏰 The 2015 Domaine Francois Raveneau Chablis 1er Cru Montee de Tonnerre is an 【outstanding Chablis, destined to give a lot of pleasure with its wonderful harmony and persistent aftertaste】. The 2015 vintage in Chablis was a very ripe and heterogeneous year. Despite hail damage that affected some of the Montée de Tonnerre plots, the wine turned out beautifully. Raveneau is a true legend of Burgundy, known for whip-smart farming, hand-harvesting, and microscopic yields to concentrate energy on fewer berries. Fermentation occurs in barrels, and wines are kept on lees for a longer élevage, with old vines rewarding great patience. This wine has a tightly wound bouquet with a slight fumé note, a trace of sea cave, and a tang of the sea. The palate is very well balanced with a fine line of acidity, wonderful harmony, and a dash of nutmeg and spice emerging toward a very persistent aftertaste. It offers elegant, pure, and airy aromas of pear, lemon, flinty minerality, spring flowers, and incipient notes of beeswax. The wine is deep, full-bodied, and displays excellent nervosité, with a rock-solid core, fine focus and grip, and a very long, zesty, and complex finish. Some notes mention oak, vanilla, caramel, pear, saline, lemon zest, and ginger.
