🏰 The 1990 vintage in Burgundy is generally considered excellent, producing wines with good concentration and aging potential. The Cuvée Cyrot-Chaudron is named after the Cyrot-Chaudron couple who donated the vineyard in 1979. It is entirely situated in Les Montrevenots, a well-situated Premier Cru vineyard near the Pommard boundary.
This wine exhibits the silky finesse of aged red Burgundy, with attractive tertiary notes of cured meat and mushroom, alongside dried cherry fruit. It is savory and earthy, with hints of cocoa and slight spice, and resolved tannins. The color is typically garnet-purple of medium depth. Given its age, this wine requires careful handling. Stand the bottle upright for several days to allow any sediment to settle. Decant gently and slowly just before serving to separate the wine from its sediment. Old corks can be fragile, so use a Durand or an Ah-So opener. Serve at 16-18°C (60-64°F) to allow its complex aromas to develop.
