🏰 Even in the challenging 2002 vintage, M. Chapoutier's mastery shines through in this iconic Ermitage Le Pavillon, a single-vineyard Hermitage renowned for its power and longevity. This wine is a testament to meticulous vineyard management and winemaking expertise, offering a profound expression of Syrah. Expect a complex bouquet of 【dark black fruits, black pepper, olive tapenade, and smoked meat, underpinned by a distinctive granite minerality】. On the palate, it is full-bodied and concentrated, with a firm structure that has softened with age, revealing 【layers of licorice, leather, and savory game notes, leading to a long, commanding finish】.
🍴 This powerful and complex Hermitage is an exceptional partner for robust and flavorful dishes. It pairs magnificently with roasted or braised red meats, such as lamb shoulder, beef short ribs, or rich game like venison and wild boar. Strong, aged cheeses would also be a superb accompaniment.
🥂 A wine for serious contemplation and appreciation, ideal for a special occasion or a vertical tasting of M. Chapoutier's finest. While mature, this Le Pavillon still possesses significant aging potential and will continue to evolve.
BACKGROUND
