FEATURES
🏰 The 1994 M. Chapoutier Ermitage Le Pavillon is a truly remarkable wine, hailed as a blockbuster and often ranking among France's top offerings. This vintage showcases the profound richness and concentration derived from exceptionally old Syrah vines, some 90-100 years old, which naturally yield high-quality, low-volume production. Grapes are meticulously hand-harvested at optimal ripeness, and the wine undergoes extended maceration to achieve tannin polymerization, followed by 18 to 20 months of aging in oak casks. 【Phenomenally concentrated and profound richness, often among France's top wines.】 This Hermitage presents a deep garnet red with purple highlights. The nose is complex, revealing tarry and smoky notes alongside vibrant raspberry, blackberry, walnut, and liquorice. On the palate, it offers a powerful yet velvety and balanced attack, leading to a long finish echoing liquorice, tobacco, and cocoa. It embodies the essence of blackberries and cassis, structured by substantial tannins that maintain elegance. 🥂 This is a wine for the discerning collector, perfect for a significant anniversary celebration or a sophisticated tasting event. It demands respect and rewards patience, with full maturity expected after 10-12 years and a potential to age for 30+ years. Serving Advice: Given its age, handle this bottle with utmost care. Stand it upright for several days to allow any sediment to settle. Decanting for 1-3 hours is recommended to separate sediment and allow the wine to express its full bouquet, but monitor closely to prevent over-exposure. Use a reliable corkscrew, as older corks can be fragile. Serve at 16-18°C (60-64°F). 🍴 Ideal pairings include robust red meats such as rib of beef, rich game dishes like hare stew, wild boar, or venison, and mature goat cheeses. It also complements lamb beautifully.
BACKGROUND
Maison M. Chapoutier is one of the most recognizable producers in the Rhône Valley. It is known for its wines from both the north and south of the valley, but in particular for its red and white Hermitage wines, made from Syrah and a blend of Marsanne and Roussanne, respectively.Outside of the flagship vineyards in Hermitage, Chapoutier has vineyards across the Rhône, including plots in Côte Rôtie, Châteauneuf-du-Pape and Condrieu. These span both single-vineyard expressions and generic AOC-level wines. Chapoutier also makes regional Côtes du Rhône wines, and has viticultural interests in Australia (Domaine Tournon), Portugal and Alsace.
