🏰 The 2020 Vincent Dauvissat Chablis comes from a growing season that delivered ripe fruit while maintaining excellent acidity, resulting in a precise style. This wine is considered a benchmark for the appellation, a true reference point from one of Chablis' most revered domaines. The vintage itself was early and dry, with good volume and plenty of maturity, despite some initial frost. On the nose, expect vibrant aromas of citrus peel, green apple, and white flowers, with distinctive oyster shell and wet limestone notes emerging as it opens. The palate is focused and tensile, showcasing ripe yet restrained orchard fruit over a firm mineral core. It's medium to full-bodied, taut, and racy, with impeccable Chablisien credentials and a long, intensely mineral finish. Decanter praises it as a fine Chablis that is both powerful and concentrated, yet retains a lovely lift, with plenty of acidity and distinctive mineral flavors, along with spiced, confit lemon character. 【Benchmark village Chablis from a cult domaine, known for precision and age-worthiness】.
🍴 This Chablis is a versatile partner for a range of dishes. It shines with fresh oysters, grilled seafood like scallops or white fish, and light poultry dishes. Its crisp acidity also makes it an excellent match for goat cheese salads or creamy pasta dishes with vegetables.
🥂 The 2020 Vincent Dauvissat Chablis offers both early definition and the structure to develop beautifully in the bottle, promising to evolve gracefully over the next 10-15 years. It has a drinking window extending through approximately 2030. This makes it a compelling cellar candidate for collectors and an ideal choice for a sophisticated seafood dinner, a summer garden party, or as an elegant aperitif.
