🏰 The 2007 Chapelle d'Ausone is a delicious and crisp second wine from the prestigious Chateau Ausone, revealing lots of minerality along with raspberry and black cherry characteristics, offering 【flavors similar to its more famous sibling】. The 2007 growing season in Bordeaux was marked by capricious weather, yet the 2007 Chapelle d'Ausone emerged as a sterling example of precision viticulture and meticulous selection, encapsulating an extraordinary expression of Merlot and Cabernet Franc. It's considered a smooth wine, rich for the vintage. It offers a very fine nose with blackberry, minerals, and a touch of oyster shells, evolving to pure blackberry, cassis, and a hint of blueberry with a silky finish. Robert Parker noted raspberry and black cherry characteristics with a supple texture. Other notes include dark cherry, subtle earth tones, Saint-Emilion's telltale plums, and a hint of cedar. Aromas and flavors of black fruits and minerals, lifted by spices and violet, with lovely sweetness of fruit and vivacity.
🍴 Excellent with beef and venison. Its elegance and fruit profile would also complement roasted poultry, mushroom-based dishes, or a fine cheese platter.
🥂 A delightful choice for a sophisticated dinner, a special gathering, or as an introduction to the elegance of Saint-Emilion wines. It's a terrific second wine that offers depth and intensity.
BACKGROUND
Chateau Ausone is one of the prestigious few Saint-Emilion producers with Premier Grand Cru Classe A status. It is relatively small compared to other top rated Bordeaux Chateaux, and its 7-hectare (17-acre) vineyard is planted almost entirely to Cabernet Franc and Merlot. A small amount of Cabernet Sauvignon appears in its second wine, Chapelle d'Ausone.
