FEATURES
🏰 Château Pavie Macquin 1998 is a magnificent red Bordeaux from Saint-Émilion, hailing from a vintage described as a "triumph on the Right Bank" due to a near-perfect growing season with hot days, cool nights, and sufficient dryness. 【This estate was promoted to Premier Grand Cru in 2006, solidifying its status as one of Saint-Emilion's stars】. The 1998 Pavie Macquin is considered by many to be the most important wine of the 1990s from this estate. It presents a pale to medium garnet-brick color. The bouquet is incredibly pure, singing with notes of blueberry preserves, blackberry pie, black cherry compote, eucalyptus, mocha, dried lavender, and Chinese five spice. On the palate, it is medium to full-bodied with seductive blue and black fruit layers, framed by velvety tannins and perfect freshness, culminating in incredible length and depth. Expect additional aromas of earth, stone, violets, pencil, leather, cherry, plum, tobacco, currant, and cassis. It is fully mature yet retains plenty of life ahead.
🍴 This powerful Bordeaux is best paired with classic meat dishes such as veal, pork, beef, lamb, duck, game, roast chicken, and grilled or braised preparations. It also harmonizes well with Asian dishes, rich fish courses like tuna, mushrooms, pasta, red meat, grilled meats, steak, stew, and even spicy Hunan dishes.
🥂 The 1998 Pavie Macquin is gorgeous to drink now, but can continue to evolve over the next few years, reaching its peak maturity between 10-30 years after the vintage. Serve it at 15.5 degrees Celsius (60 degrees Fahrenheit). Young vintages benefit from 2-3 hours of decanting, while older ones may need very little, just enough to remove sediment. This wine is ideal for a grand celebration, a significant anniversary, or a sophisticated dinner where a mature, complex Right Bank Bordeaux will be appreciated.
