🏰 The 2000 vintage in Bordeaux was highly acclaimed, often considered one of the best of the decade, producing wines with excellent structure, concentration, and aging potential. It was a classic vintage with favorable weather conditions throughout the growing season.
This 2000 Les Pagodes de Cos displays a beautiful ruby-red color with soft tannins and a good concentration, reminiscent of the Grand Vin but with less tannin and density. It reveals an agreeable density and highlights its magnificent fruity nature. Robert Parker noted a dark ruby/purple color, sweet tannin, and medium body. James Suckling described intense aromas of crushed berries and pressed flowers with a hint of currant bush, full-bodied and chewy with lots of tannins but loads of fruit, a muscular, big wine. 【 A second wine of Cos d'Estournel, offering much of the character of its bigger sister at a more accessible price. 】
This 2000 vintage Bordeaux is now showing its mature character, offering a glimpse into the elegance and complexity that only time can bestow. Expect a wine that has evolved beautifully, with tertiary aromas and a softened palate. However, older wines can be delicate. The cork and capsule may be fragile, so careful handling is advised.
Serving Advice: For a wine of this age, consider standing the bottle upright for at least 24-48 hours before serving to allow any sediment to settle. Decanting is recommended to separate the wine from its sediment and allow it to breathe, revealing its full aromatic spectrum. For vintages between 1982 and 2000, decanting about an hour before serving is recommended to gently release aromas. Serve at cellar temperature, around 16-18°C (60-64°F).
🍴 This wine is an excellent match for beef and venison. It also pairs well with roast duck, guinea fowl with jus, steak frites, wild mushroom risotto, and hard cheeses.
🥂 This wine is drinking well now and can continue to evolve. It's suitable for significant dinners or celebrations, offering a mature Bordeaux experience.
BACKGROUND
Cos d'Estournel is a vineyard and winery in the Saint-Estephe appellation of the Medoc. istorically, the Cabernet Sauvignon-dominant grand vin has had a high percentage of Merlot compared with other Medoc growths, although this has lessened in recent years. The new winery, which was built in 2012, has four vats which can be lifted to allow processes to be gravity-fed. The grand vin is matured for 18 months in new oak barrels; Les Pagodes sees 12 months in new oak whilst Marbuzet and rouge are matured in 50 percent new wood. Annual production of the various wines varies between 200,000 and 380,000 bottles.
