This is a Méthode Ancestrale sparkling white wine, typically a blend of Chenin Blanc, Grolleau Gris, Cabernet Franc (Blanc de Noirs), and Chardonnay. It's made by the Vaillant Family, focusing on grapes, juice, and fermentation with no artifice. Disgorgement occurs after about 6 months on the lees, and the wine is made without added sulfur. The nose crackles with green apple, delicate brioche, and chalk. On the palate, it's vibrant, even explosive, with a thirst-quenching freshness and a slightly chalky texture.
