🏰 The 2021 Francois Raveneau Chablis Les Butteaux 1er Cru is a wine from a challenging yet rewarding vintage, described as a strong effort that builds on its promise with effervescent yellow fruit, quince, and crushed stone aromas, with a hint of hazelnut. This Chablis is focused and taut, with wild fennel threading through a citrus core, adding an herbal edge that lifts the wine. It's built to last, with some suggesting it needs 15-20 years to fully develop. The 2021 Chablis vintage is characterized by vibrant acidity and a strong terroir influence, producing wines that will reward careful cellaring. Reviewers note its intense lemon fruit, menthol notes, dense, sappy, and textured palate, with great detail and finesse, leading to a salty, long, and lingering finish. It's aristocratic, with chewy saline minerality, citric freshness, and a palpable sense of seashells and ancient oceans.
🍴 This vibrant and mineral-driven Chablis is an ideal partner for fresh seafood. Think raw oysters, seared scallops, grilled sea bass, or delicate sushi and sashimi. Its crisp acidity and saline notes will cut through the richness of shellfish and complement the subtle flavors of white fish. It also pairs well with creamy cheeses or a classic chicken in a light cream sauce.
