This exquisite red Burgundy pairs beautifully with good-quality poultry, patiently oven-roasted lamb, or roast feathered game. It also complements a thick cut of lean, firm-textured beef, spicy couscous with poultry, or even pan-seared foie gras. For cheeses, intensely-flavored varieties such as Époisses, Langres, or Cîteaux are ideal.
