Vincent Dauvissat, Chablis Les Clos Grand Cru, 2015
🏰 The 2015 vintage in Chablis was a "delicious" and warm year, yielding wines with a slightly riper and broader aromatic profile than traditional Chablis, yet maintaining their inherent purity. Vincent Dauvissat's Chablis Les Clos Grand Cru 2015, despite hail damage that reduced the crop, is an "outstanding" and "exquisitely defined" wine. Initially, it might be quite closed, gradually revealing nuanced aromas of oyster shell, quince, baking powder, and flint, alongside apple, pear, beeswax, and a pronounced chalky, flinty minerality. The palate is deep, full-bodied, and pure, with bright acidity and a long, well-balanced finish. This wine is built for the long haul, promising to evolve beautifully with time. 【Prestigious Grand Cru from a Master Producer】
🍴 This majestic Chablis Grand Cru demands equally grand culinary partners. It excels with richer oyster preparations, roasted poultry with truffles, or foie gras. Consider grilled lobster or spiny lobster, veal in cream sauce, or a luxurious white truffle risotto. Aged, firm cheeses would also be a superb match.
🥂 This is a wine for significant celebrations, a connoisseur's tasting, or a special occasion where a profound and age-worthy white Burgundy is desired. Its complexity and potential for evolution make it a truly memorable experience.
BACKGROUND
Domaine Vincent Dauvissat is one of the most prestigious producers in the Chablis region of northern Burgundy. It is family owned and operated and has been selling wine under the family name since 1931. The domaine owns portions of land in two Grand Cru vineyards: Les Clos and Les Preuses. In addition, Dovesate also has four top vineyards: Séchet, Vaillons, Montmains and the acclaimed La Forêt (Dovesate is labeled "La Forest"), whose quality is comparable to that of grand cru in premium vintages.
