Tasting notes describe complex aromas of blackberries, dried flowers, dark fruit, and hints of cedar and tobacco. The palate is full-bodied, dense, and wonderfully integrated with rich, melting tannins, offering vivacious notes of black cherries, stewed black plums, licorice, crushed rocks, and garrigue. Aromatic freshness combines with flavors of bitter dark chocolate, tight black cherries, slate, and mineral notes, leading to an extremely fine, focused, and long pure finish with approaching complexity.
Serving advice: This wine is still quite young and will benefit significantly from decanting for at least 1-2 hours before serving to allow its complex aromas and flavors to fully open up. Serve at around 16-18°C (60-64°F).
Food pairing suggestions: An ideal partner for robust dishes such as roasted beef, venison, or other game meats. Its structure and complexity also make it a fantastic match for truffle-infused dishes or aged hard cheeses. For an Eastern pairing, consider a rich Peking duck or a slow-cooked Cantonese beef stew.
Event suggestions: This is a wine for grand occasions – a milestone anniversary, a significant celebration, or a serious wine tasting. It also makes an exceptional gift for a discerning collector due to its age-worthiness.
