FEATURES
🏰 The Bibi Graetz Testamatta 2012 is a 【silky and structured red wine that beautifully expresses the purity and minerality of Sangiovese】 from old vineyards. The 2012 vintage of Testamatta is noted for its subtle and fragrant aroma profile, reflecting freshness and delicacy, steering clear of the over-extraction seen in some previous vintages. Expect aromas of prune, dried flowers, porcini, and cedar, leading to a full body with velvety tannins and abundant ripe fruit, dark berries, and hints of milk chocolate. Wine Spectator praised it for combining complexity, freshness, and balance, with licorice, leather, and tar chiming in on the firm finish. It maintains liveliness and precision, showcasing fine balance and length.
🍴 This bold and structured Sangiovese is an excellent match for rich, savory dishes. Classic pairings include beef, venison, and hearty pasta dishes like Bolognese. Consider roasted game, grilled steak, or a rich mushroom risotto to complement its complex flavor profile and firm tannins.
🥂 Ideal for a sophisticated dinner party, a special occasion, or as a centerpiece for a Tuscan-themed meal. It's a wine that offers both immediate pleasure and the potential for further aging, with some critics suggesting it's drinking well now and can hold for several more years. Serve at 16-18°C, and decanting for an hour can help it fully express its aromatic nuances.
BACKGROUND
Bibi Graetz is a highly acclaimed, unconventional winemaker based in Fiesole, overlooking Florence in Tuscany. An artist by training, Graetz turned to winemaking in 2000, focusing entirely on indigenous Tuscan grape varieties, particularly old-vine Sangiovese. 'Testamatta', which translates to 'Crazy Head', is his flagship wine and a true Super Tuscan, though made from 100% Sangiovese rather than international blends. Sourced from old vines across top vineyards in Tuscany, Testamatta is celebrated for its elegance, vibrant acidity, and complex layers of red cherry, floral notes, and subtle earthiness, reflecting Graetz's artistic and intuitive approach.
