🏰 The 1999 Billecart-Salmon Cuvée Nicolas François is an 【exceptional vintage Champagne, a tribute to the House's founder】, showcasing a harmonious blend of Grands Crus Pinot Noir and Chardonnay. Despite a late-season rain in 1999, the vintage produced approachable, rich wines. This cuvée, with 1/3 barrel fermentation and 10 years on lees, reveals a lovely sparkling yellow-gold color with luminous reflections and delicate, finely chiseled bubbles. It bursts with aromas of warm toasted almonds, lemon zest, poached pears, dried white floral, flinty minerals, and a gorgeous saline character. The palate is elegant, ethereal, and well-knit, offering flavors of poached pear, black licorice, lemon pâte de fruit, pastry, and ground ginger, with praline notes and a balanced tension. It's still on the upswing, maturing beautifully, and bursting with life.
🍴 This exquisite Champagne is best enjoyed with delicate shellfish, crab, and lobster. It's also magnificent on its own, allowing its complex flavors to shine.
🥂 Perfect for celebrating engagements, anniversaries, or as a truly generous gift. This fine juice is ideal for special occasions and can continue to age gracefully in your cellar for many years. Serve at 11-12°C.
