This prestigious Nuits-Saint-Georges would be exquisite with roasted game birds like pheasant or partridge, pan-seared duck breast with cherry reduction, or a classic beef bourguignon. For an Asian pairing, consider Cantonese roasted squab or a delicate braised abalone dish. It also pairs well with fine aged cheeses.

BACKGROUND
Domaine Sylvain Cathiard is a highly regarded family wine producer based in Côte de Nuits, Burgundy. Known for its sought-after, high-priced Pinot Noir wines, made from grapes sourced from First and Grand Cru vineyards in Vonn and surrounding appellations. The history of the winery begins with Sylvain’s grandfather, who started making wine in Burgundy in the 1930s. Later, descendants took over the winery and ran it until the 1980s. With approximately 5 hectares (12 acres) of vines, its most prestigious wines come from this Grand Cru vineyard, and its portfolio also includes several Grand Cru wines from Nuit-St-Georges and Vosne-Romanée.
