🏰 The 2004 Domaine François Raveneau Chablis Valmur Grand Cru is an 【outstanding expression of Chablis's Grand Cru terroir】, showcasing remarkable purity and longevity even at 20 years old. This wine, from a challenging yet ultimately rewarding vintage, offers a pale yellow color and a restrained, pure, and strong aroma of sea water, minerals, pear, apple, lemon, and a hint of nutmeg and vanillin oak. The palate is dry, tight, and elegant, starting generous before firming up with kaleidoscopic soil tones, vibrant acidity, and a long, mineral-driven, saline finish.
🍴 This exquisite Chablis pairs wonderfully with dishes featuring tomato sauce, lamb, duck, beef, and hard cheeses. It is also an excellent match for shellfish, crab, and lobster.
🥂 This 2004 Valmur is drinking beautifully now and shows no signs of decline, with significant aging potential remaining. It is ideal for special occasions or as a prized addition to a cellar. For this mature vintage, expect a fragile cork and capsule; use an Ah-So opener. Decant for 30-60 minutes to allow the wine to open and shed any sediment. Serve slightly chilled at 12-14°C (54-57°F).
BACKGROUND
Domaine François Raveneau is a producer of Chablis in Burgundy and produces its most popular wines from small plots of Chardonnay. The domaine was founded in 1948 when François Raveneau and his wife merged the family's vineyard holdings. Today, the domaine has eight hectares (20 acres) of land spread across three Grands Crus and six Premier Crus in Chablis.
