Vincent Dauvissat, Chablis Les Clos Grand Cru, 2009
🏰 Vincent Dauvissat's 2009 Chablis Les Clos Grand Cru is a 【stunning and radiant expression of Chablis, offering a flawless bouquet and a deep, full-bodied palate with laser-like focus】. The 2009 vintage in Chablis was characterized by a warm spring and a harvest of healthy, ripe grapes, resulting in wines packed with rich, luscious fruit, comparable to the acclaimed 2005 vintage. Expect scents of green apples, grapefruit, flinty minerality, smoky notes, dried flowers, and wet stones, leading to a chiseled, sculpted expression of fruit that blossoms on the finish. While showing a deep gold color, it retains sufficient acidity and benefits from air to reveal its complex layers of jasmine, wet rock, and a funky tide pool character.
🍴 This magnificent Chablis is a perfect match for rich seafood dishes. Consider roasted lobster with butter, pan-seared foie gras, or a creamy seafood pasta. It also pairs beautifully with aged Comté cheese or roasted poultry. For an Asian culinary adventure, try it with steamed abalone, delicate dim sum, or a rich crab roe dish.
🥂 Ideal for a special dinner, a vertical tasting of Chablis Grand Crus, or as a gift for a serious white wine collector. This wine is mature and drinking beautifully now, but still has potential. Decant for 30-60 minutes to allow its full spectrum of aromas to emerge. Serve well-chilled at 10-12°C (50-54°F).
