Philippe Pacalet, Gevrey Chambertin Les Corbeaux 1er Cru, 2020
🏰Philippe Pacalet's Gevrey-Chambertin Les Corbeaux 1er Cru 2020 is a highly anticipated release from a winemaker known for his natural winemaking approach, emphasizing minimal intervention and indigenous yeasts to express the purest terroir. The 2020 vintage in Burgundy was generally excellent, characterized by a warm and dry growing season that resulted in ripe, concentrated, yet fresh wines. This particular 1er Cru from Les Corbeaux is expected to showcase the power and elegance typical of Gevrey-Chambertin, with a focus on purity and finesse. Tasting notes often highlight a vibrant ruby color, with aromas of 【red and black berries, violets, and earthy undertones】, evolving into more complex notes of spice and forest floor with age. On the palate, it is typically medium to full-bodied with fine tannins and a long, mineral-driven finish, reflecting the unique characteristics of the Les Corbeaux vineyard.
🍴 Chinese Cantonese food pairing various types of suggestion east or west corresponding to wine cost IN ENGLISH
This elegant red Burgundy pairs beautifully with classic French and refined Cantonese cuisine. Consider serving it with 【roasted duck breast with cherry reduction】, 【pan-seared foie gras】, or a delicate 【Cantonese-style steamed fish with ginger and scallions】 (ensuring the sauce isn't too overpowering). It also complements earthy dishes like 【mushroom risotto】 or 【truffle pasta】.
🥂 fit for event suggestion IN ENGLISH
An exceptional choice for a sophisticated dinner party, a romantic evening, or a special occasion where a fine, expressive red Burgundy is desired. It's also a fantastic wine for a serious wine tasting or for adding to a discerning cellar. This wine has excellent aging potential and can be enjoyed now with decanting, or cellared for further development.
BACKGROUND
Philippe Pacalet is a prominent figure in the natural wine movement in Burgundy. After working at Domaine Prieuré Roch, he started his own micro-négoce business in 2001. Pacalet is known for his strict adherence to natural winemaking: organic farming, whole-cluster fermentation with indigenous yeasts, and minimal sulfur use. 'Les Corbeaux' is a Premier Cru vineyard in Gevrey-Chambertin, situated right next to the Grand Cru Mazis-Chambertin. Pacalet's interpretation of Les Corbeaux is highly aromatic and elegant, featuring notes of wild berries, floral perfume, and a distinct earthy minerality, with a silky texture and refined tannins.
