BACKGROUND
Philippe Pacalet is a prominent figure in the natural wine movement in Burgundy. After working at Domaine Prieuré Roch, he started his own micro-négoce business in 2001. Pacalet is known for his strict adherence to natural winemaking: organic farming, whole-cluster fermentation with indigenous yeasts, and minimal sulfur use. 'Les Corbeaux' is a Premier Cru vineyard in Gevrey-Chambertin, situated right next to the Grand Cru Mazis-Chambertin. Pacalet's interpretation of Les Corbeaux is highly aromatic and elegant, featuring notes of wild berries, floral perfume, and a distinct earthy minerality, with a silky texture and refined tannins.
