🏰 The 2021 vintage in Bandol was marked by a chaotic season with significant drought, yet Domaine Tempier was relatively spared, resulting in wines with intense colors, aromatic profiles, good acidity, and fine aging potential, reminiscent of the 1990s or the 2008/2013 vintages. Cabassaou represents Domaine Tempier's smallest production and is the ultimate showcase of Mourvèdre, benefiting from a microclimate protected from the mistral wind. The 2021 vintage, in particular, is noted for being pleasantly accessible, rustic yet charming. 【Rare, single-vineyard Bandol showcasing Mourvèdre, from a challenging yet successful vintage】。This wine offers notes of dark bramble, mulberry, and plum skin, tempered by a fresh bite of blood orange and violet. It is intense and deep, with minerality complementing its blackberry fruit and demonstrating great depth and penetration. Expect an inky plum red color, with a nose revealing blackberry, plum, licorice, coffee bean, tar, tobacco, black olive, earth, dirt, garrigue, and minerals. The palate is full-bodied with black fruit, coffee bean, and grippy tannins.
🍴 Mourvèdre-dominant wines like Bandol pair exceptionally well with rich, savory dishes such as roasted lamb, beef stew, game, and Mediterranean cuisine featuring aromatic herbs.
🥂 This wine is perfect for a special dinner, a gathering of wine lovers, or a celebratory meal where a powerful and complex red wine is desired. Its excellent aging potential also makes it a superb candidate for cellaring.
