🏰The 2012 vintage in Burgundy was challenging due to difficult weather, but top producers like Domaine Arnoux-Lachaux, under the guidance of Charles Lachaux, managed to craft wines of impressive quality. This vintage marked the debut of Charles Lachaux's groundbreaking approach, incorporating 50% whole-cluster fermentation, a radical departure that transformed the estate towards organic, empirical winemaking. This innovative technique contributes to the wine's expressive character and fine tannins.
🍴This structured and expressive red Burgundy is an excellent partner for classic French cuisine. Consider roasted game, beef bourguignon, coq au vin, or mushroom-based dishes. It also pairs well with aged hard cheeses. For an Asian pairing, try Cantonese roasted pigeon or a rich braised duck dish.
🥂Ideal for a special dinner or a Burgundy tasting, this wine is drinking well now but has the potential to age gracefully for many more years. Serve at 16-18°C (60-64°F) and consider decanting for 2-3 hours to allow its complex aromas to fully develop.
