🏰 The 1995 vintage in Bordeaux was generally considered very good, particularly for sweet wines like Sauternes, benefiting from ideal conditions for noble rot development. Château Climens, a Premier Cru Classé from Barsac, is renowned for its exceptional sweet wines, often hailed as 【one of the greatest Sauternes producers】. The 1995 Château Climens is a testament to this, showcasing a beautiful balance of richness and freshness. Expect a captivating bouquet of apricot, honey, citrus zest, and floral notes, with a luscious, concentrated palate and a long, elegant finish. This wine is known for its remarkable aging potential, developing even greater complexity over decades.
🍴 This exquisite sweet wine is a classic pairing with foie gras, whether pan-seared or in a terrine. It also harmonizes beautifully with blue cheeses like Roquefort or Stilton, where the sweetness of the wine contrasts with the salty tang of the cheese. For dessert, consider fruit tarts, crème brûlée, or dishes featuring peaches and apricots.
🥂 The 1995 Château Climens is perfect for a truly special occasion, such as a milestone anniversary, a significant birthday, or a celebratory dinner. Its complexity and luxurious character make it an ideal choice for a sophisticated dessert course or as a contemplative apéritif to be savored slowly.
BACKGROUND
Château Climens is a wine producer located in the Sauternes village of Barsac on the left bank of the Gironde River. The only grape planted in the vineyards at Château Climens is Semillon, which thrives on the limestone-rich soils in the vineyards. The grapes are harvested and brought into the winery, plot by plot, where they are gently pressed before fermentation in oak barrels. Maturation takes place in French oak barrels on lees for about 20 months. Wines from the best vintages can last decades – a recent tasting of the 1921 vintage revealed a rich, balanced and zesty wine.
