Vincent Dauvissat, Chablis Les Preuses Grand Cru, 2021
🏰 The 2021 vintage in Chablis, like much of Burgundy, was marked by challenging weather conditions, including frost and hail, leading to lower yields but often resulting in wines of remarkable purity, freshness, and high acidity. Vincent Dauvissat is a revered producer known for crafting traditional, age-worthy Chablis Grand Cru wines that truly express their terroir. His Chablis Les Preuses Grand Cru is particularly celebrated for its profound minerality, intense concentration, and a complex interplay of citrus, green apple, and wet stone notes, often with a subtle hint of oyster shell. These wines are known for their ability to age gracefully, developing further complexity and richness over time. 【 A benchmark Chablis Grand Cru known for profound minerality and age-worthiness. 】
🍴 This exquisite Chablis Grand Cru demands pairings that highlight its purity and minerality. Classic choices include fresh oysters, grilled or pan-seared white fish (like sole or turbot), and delicate seafood platters. It also pairs beautifully with goat cheese or light poultry dishes. For an Asian culinary experience, consider sushi, sashimi, or steamed scallops with a light soy dressing.
🥂 This wine is perfect for a sophisticated seafood dinner, a special celebration, or a serious tasting focused on the finest expressions of Chablis. Its elegance and depth make it suitable for intimate gatherings or as a thoughtful gift for a Burgundy enthusiast.
