🏰news | features + short tasting note IN ENGLISH
【Raveneau's 2008 Chablis Montmains 1er Cru is a benchmark example of aged Chablis, offering profound minerality and complexity from one of the region's most revered producers.】 The 2008 vintage in Chablis was challenging but ultimately produced wines of great purity, tension, and classic Chablisien character, often requiring time to unfurl. This Montmains 1er Cru, from a producer synonymous with quality, would now be showing a beautiful evolution. Expect a bouquet of wet stones, oyster shell, green apple, and a hint of honeyed richness or toasted nuts from its age. On the palate, it's intensely mineral-driven with a vibrant acidity, a creamy texture developed over time, and a long, saline finish. It's a wine that speaks clearly of its cool-climate origins and limestone soils.
🍴 Chinese Cantonese food pairing various types of suggestion east or west corresponding to wine cost IN ENGLISH
This mature Chablis is superb with fresh oysters, grilled sea bass, or pan-seared scallops. For a Cantonese pairing, consider steamed garoupa with ginger and scallions, or delicate seafood dumplings. It also pairs wonderfully with aged goat cheese or a classic chicken in cream sauce.
🥂 fit for event suggestion IN ENGLISH
Ideal for a special seafood dinner, a celebration of a milestone, or for a serious Chablis enthusiast looking to experience the magic of aged 1er Cru. This wine is at a beautiful drinking window, showcasing the elegance and depth that only time can bring. Serve slightly chilled, around 10-12°C (50-54°F), to allow its complex aromas to fully express themselves. Be mindful of the cork, as older vintages can be more fragile.
