🏰 Château Gilette is legendary for its old vintages, producing exclusively sweet white wines in the Sauternes appellation. What makes Gilette unique is its aging process: the wine is held in small epoxy-lined concrete vats for anything from 12-25 years before bottling, and then another 3-5 years in bottle before release. This unusual method reinforces the natural fruit flavors and high citrus notes, making the wines almost immortal with sensational aromatic complexity and an everlasting finish. The 1953 vintage is slightly less rich and fat than the 1955, but still impressive. The 1953 Crème de Tête is spicy and oaky, with a bouquet suggesting melted caramel and ripe pineapples. It is full-bodied, still fresh and lively, unctuous, and rich. Expect amber-colored nectar with crème brûlée and mandarin flavors, enormously concentrated, perfectly balanced citrus acidity, and acacia sweetness. It's a Sémillon-Sauvignon Blanc blend. Its 【 unique aging process of over twenty years in cement tanks 】 sets it apart. 🍴 A classic pairing for Sauternes is foie gras, but it also excels with blue cheeses (like Roquefort), fruit tarts, crème brûlée, or simply on its own as a contemplative dessert. For Eastern pairings, consider almond tofu dessert or delicate mooncakes (without overly sweet fillings). 🥂 This is a truly rare and historic wine, perfect for a milestone anniversary, a significant birthday, or a very special dessert course at a grand celebration. It's a wine to be savored and remembered. This is a very old and potentially fragile wine. The cork will likely be extremely delicate; use an Ah-So opener or a Durand. Do not decant unless absolutely necessary, and if so, do it very carefully and just before serving to avoid excessive oxidation. Stand the bottle upright for several days before opening to allow any sediment to settle. Serve chilled, around 10-12°C (50-54°F), but not too cold, to allow its complex aromas to unfold.
BACKGROUND
The story and creation of Chateau Gilette dates back to 1710, when two, well-known Sauternes families got together through marriage.The 4.5 hectare Sauternes vineyard of Chateau Gilette is located in the commune of Preignac. The walled in vineyard has a terroir of gravel, sand, rock, limestone and clay based soils. The vineyard is planted to 85% Semillon , 10% Sauvignon and 5% Muscadelle .
