FEATURES
🏰 The Guillaume Selosse Champagne Largillier Extra Brut is a non-vintage Blanc de Noirs (100% Pinot Noir) from a truly special site, crafted with an inspired approach by Guillaume Selosse, son of the legendary Anselme Selosse. His early wines are noted for their similarity to his father's style. Guillaume employs a unique method, leaving the current harvest wine on lees in barrel for two years, then blending it with a perpetual reserve for a third year of aging before bottling for secondary fermentation. This meticulous process, combined with the Kimmeridgian chalk soil, allows Largillier to develop 【complexity and palate texture like no other 'young' Champagne】. The wine pours a deep gold color. On the nose, expect toasted nuts, dried fruit, tangerine zest, and spices, alongside golden delicious apple and peach. The palate is flamboyant and textural, with a tangy line of acidity and chalky structuring extract, bringing freshness to its generous profile. It offers more apple, jasmine, honey, nut, and light brioche, with a hint of pleasant oxidation, autolysis, and maillard reaction rather than overt oxidation. It's a rich, concentrated, full-bodied Champagne with sharp acidity and strong effervescence.
🍴 This exceptional Champagne is a perfect match for shellfish, crab, and lobster, where its complexity and acidity can truly shine. It also complements rich fish dishes and aged hard cheeses.
🥂 An ideal choice for celebrating significant achievements, a luxurious aperitif, or a sophisticated pairing with a gourmet seafood dinner. Its unique character makes it a memorable experience.
