FEATURES
🏰The 1980 Moet & Chandon Dom Perignon Oenotheque is a truly historic Champagne, representing a rare release from a challenging vintage that was not widely regarded as notable. Despite cold and wet conditions, an Indian summer in September salvaged the harvest, allowing houses like Dom Perignon to produce wines with good acidity and aging potential. This Oenotheque bottling (now known as P2/P3) showcases the house's dedication to quality, offering a 【unique glimpse into a bygone era of Champagne production】. 🍴 This mature Champagne, with its complex tertiary notes of brioche, toasted nuts, and dried fruits, pairs beautifully with a range of refined dishes. Consider classic pairings like fresh oysters, caviar, smoked salmon, roasted chicken, or delicate seafood preparations. It also complements mild, creamy cheeses. 🥂 A truly exceptional wine for a significant anniversary, a collector's tasting, or a very special celebration where the rarity and age are appreciated. The 1980 Champagne vintage was challenging, but houses like Dom Pérignon still released wines, showcasing their dedication to quality. This Oenotheque bottling represents a rare opportunity to taste a piece of Champagne history. Expect a mature, complex profile with notes of brioche, toasted nuts, and dried fruits, a testament to its remarkable longevity. While the cork and capsule might show their age, the liquid inside promises a unique historical experience. Serve well chilled, around 8-10°C, and handle with care due to its age.
BACKGROUND
Dom Pérignon can trace its origins back to the Abbey of Saint Pierre d'Hautvillers in the Champagne appellation of France – the so-called birthplace of Champagne.Dom Pérignon has set down its guiding winemaking principles in a manifesto. This document declares Dom Pérignon's commitment to vintage wine blended from Chardonnay and Pinot Noir grapes. Geoffroy is in charge of declaring a Dom Pérignon vintage. Indeed, he has achieved the rare feat of overseeing the release of five vintages in a row, from 2002 to 2006. Each vintage is unique, with grapes sourced from only the best vineyards in Champagne. Unlike most Champagne producers who harvest the grapes early, Geoffroy prefers to wait for the grapes to ripen slowly.
