Serving suggestion: Wines of this age can be fragile; the cork and capsule may be delicate, requiring extra care during opening. Sediment is also to be expected. Stand the bottle upright for several days before serving to allow any sediment to settle. Decant very gently and slowly, just before serving, to separate the clear wine from the sediment. Avoid excessive aeration. Serve slightly chilled, around 10-12°C (50-54°F), in appropriate white wine glasses.
BACKGROUND
Domaine Vincent Dauvissat is one of the most prestigious producers in the Chablis region of northern Burgundy. It is family owned and operated and has been selling wine under the family name since 1931. The domaine owns portions of land in two Grand Cru vineyards: Les Clos and Les Preuses. In addition, Dovesate also has four top vineyards: Séchet, Vaillons, Montmains and the acclaimed La Forêt (Dovesate is labeled "La Forest"), whose quality is comparable to that of grand cru in premium vintages.
