🏰 Domaine Gauby's vineyards are situated in a privileged geographical and climatic location, where the altitude (150-300 meters) tempers the summer heat, and the well-preserved, wild surroundings contribute to the magnificent landscape. The soils, composed of schist, clay, and marl, allow the roots to plunge deeply, adding complexity to the wines. The vineyards have been organic since 1996 and fully biodynamic since 2001. Gérard Gauby and his son Lionel are resolutely respectful of their environment, having long banned chemical treatments in favor of "homemade" concoctions like essential oils and compost. They consistently aim for elegance and freshness, and their wines are known for balanced alcohol and longevity. Domaine Gauby is considered a mythical domain of Roussillon and one of the true pioneers of the region.
Coume Gineste is the flagship white cuvée of the domain, made from Grenache Gris and Grenache Blanc vines, approximately sixty years old, planted at 200 meters altitude on schist, clay, and limestone soils. This geological diversity contributes significantly to its aromatic complexity. The wine is aged for one year, half in new barrels and half in one-wine barrels, with regular bâtonnage. It is described as combining the freshness of a young white wine with the richness of a complex wine, typical of great Southern French terroirs. The Grenache Blanc of Coume Gineste expresses great finesse, with a subtle minerality that truly shines. Tasting notes include minerals, honey, smoke (earthy notes), apricot, apple, peach (tree fruit notes), citrus, lemon, and orange (citrus notes). Some mention oak, vanilla, butter, almond, toast, nutty, tropical, mango, prune, raisin, orange blossom, peony, cream, and anise. It can have a honeyed texture but with an acidity reminiscent of Santorini. On the nose, it can be almost explosive with lime and herbs over ripe honeyed fruit and intense mineral notes. Citrus freshness on the palate with tremendous depth and complexity, leading to a long honeyed finish, and a stunning "chewy" texture with dominant minerality.
