🏰 The 1979 Château Ausone is described as a glorious bottle of wine and clearly one of the greatest wines of the vintage. Despite 1979 being a challenging vintage in Bordeaux, Ausone, a Premier Grand Cru Classé A (though it famously withdrew from the classification in 2022), produced an exceptional wine. The stunning bouquet soars from the glass with black cherries, menthol, woodsmoke, chocolate, notes of venison, glorious soil tones, and a hint of vanillin oak. The nose can also leap with vibrant kirsch, liquorice, and wild strawberry scents. On the palate, it is full-bodied, deep, and quite powerful for the vintage, with perfect focus and balance, excellent mid-palate concentration, and a very long, complex, and beautifully balanced finish. The tannins are now falling away, but the wine retains plenty of integrated, gentle acidity, allowing it to carry for years to come. For a wine of this venerable age, careful handling is paramount. The cork may be fragile, so a Durand opener or an Ah-So cork puller is highly recommended. Stand the bottle upright for several days, or even a week, before serving to allow any sediment to settle. Decanting is advisable, but gently and slowly, just before serving, to separate the wine from its sediment. Avoid aggressive decanting, as too much air can cause very old wines to fade quickly. Serve at a cool cellar temperature, around 15-16°C (59-61°F), to best appreciate its delicate nuances.
🍴 Best served with classic meat dishes such as lamb, deer, venison, and poultry. It would also be exquisite with roasted beef, braised game, or a simple, elegant preparation of duck.
