🏰The 1990 Vincent Dauvissat Chablis Le Forest 1er Cru is an 【exceptional Premier Cru Chablis renowned for its remarkable density, purity, and aging potential, often rivaling Grand Cru quality】. At over three decades old, this wine would have evolved beautifully, showcasing complex aromas of honey, dried fruits, mushroom, and subtle nutty nuances. Expect excellent concentration on the palate with precise, pure fruit flavors, balanced by vibrant acidity and pronounced mineral tension, often with notes of elderflower, lemon, apple, and a silky texture.
🍴 This mature Chablis 1er Cru pairs wonderfully with cooked oysters or fish in rich sauces, poultry or veal in white cream sauces, and delicate preparations with mushrooms or crayfish. It can also stand up to foie gras or grilled lobster.
🥂 This is a wine for a truly special occasion, perhaps an anniversary or a significant milestone, where its evolved complexity can be savored. Given its age, expect an old-world style with tertiary notes taking center stage. While the condition of older corks and capsules can vary, a well-stored bottle promises a unique and rewarding experience. Serve carefully, perhaps decanting gently to separate any sediment, and allow it to open up slowly in the glass to reveal its full spectrum of aromas.
BACKGROUND
Domaine Vincent Dauvissat is one of the most prestigious producers in the Chablis region of northern Burgundy. It is family owned and operated and has been selling wine under the family name since 1931. The domaine owns portions of land in two Grand Cru vineyards: Les Clos and Les Preuses. In addition, Dovesate also has four top vineyards: Séchet, Vaillons, Montmains and the acclaimed La Forêt (Dovesate is labeled "La Forest"), whose quality is comparable to that of grand cru in premium vintages.
