🏰 Jean-Marc Roulot is an exceptional grower, consistently producing some of the finest white Burgundy wines, known for capturing minerality like few others. The 2007 Meursault 1er Cru Porusot, while not a legendary vintage, is harmonious, refined, and possesses substance, richness, and a fine saline minerality, still showing potential. It can offer hints of undergrowth and wet wool, reminiscent of a fine Chenin Blanc with age, alongside a very fine tension, and a touch of spice and ginger. Many bottles from this vintage are still remarkably fresh and vibrant, with layers of hazelnut, white flowers, and well-integrated matchstick notes. It's a wine that, when it escapes the premox curse, is truly glorious, showcasing laser-like focus and haunting intensity.

🍴 This mature Meursault pairs beautifully with rich fish, poultry in creamy sauces, and mild to medium-aged soft cheeses.
🥂 Perfect for a special dinner, a celebration, or a focused tasting of aged white Burgundy. This 2007 Meursault is well into its maturity, showcasing the elegance of aged white Burgundy. Expect a delicate cork; a two-pronged Ah-So opener is recommended. Decant carefully for about 30 minutes to an hour to allow it to open up, but avoid excessive aeration which could diminish its delicate nuances. Serve slightly chilled, around 12-14°C (54-57°F).
