Expect a pale straw colour with crystal clarity, offering aromas of fresh almond and apple, complemented by biscuity and mineral notes, often hinting at gunflint. With age, these wines typically evolve from sprightly youth to a fuller, meatier texture, maintaining good aromatic persistence. Some older examples have shown oxidative notes that dissipate with aeration, revealing elegance and fruit.
🍴 This exquisite white Auxey-Duresses pairs beautifully with prawns and fish in spicy sauces, ratatouille, or cooked shellfish. It's also excellent with delicate fish, whether pan-fried or steamed, omelettes, poached eggs, or lightly seared vegetables. Consider pairing it with cheeses from the Gruyère family, blue cheeses, or certain goat's cheeses. A surprising match can be a salad of fresh beets, arugula, and goat cheese.
🥂 This is a wine for truly special occasions, intimate dinners, or a contemplative tasting experience for serious collectors. Its rarity and pedigree make it a highlight. Serve at 12-14°C (53-57°F) to best appreciate its complex aromatics and texture. Gentle handling is advised for this mature white Burgundy.
BACKGROUND
Domaine d Auvenay is a small Burgundy wine estate located in Saint-Roman. It is the third entity in the Leroy empire, named after Lalou Bize-Leroy and was previously run by her husband Marcel Bize until his death in 2004. There are 4 hectares (10 acres) of vines, but these include plots of the Grand Cru Mazis-Chambertin, Bonnes-Mares and Bâtard-Montrachet, as well as a handful of top cru vineyards, including Puligny-Montrachet Les Folatières and Meursault les Gouttes d 'Or.
