FEATURES
🏰 The 1987 vintage for white Burgundy was generally considered average, with a small crop of light, early-maturing wines. However, top producers like Ramonet were among the best, and their Montrachet Grand Cru could still offer a delightful experience. The growing season saw an early budburst and flowering, followed by mixed conditions with heavy rainfall and dry periods. A warm, sunny September allowed the small crop to ripen well. While most 1987 white Burgundies are past their prime, a Ramonet Montrachet Grand Cru from this vintage, if well-preserved, would be a rare treat. This wine, at nearly four decades old, embodies the subtle elegance of a mature Montrachet. Expect delicate aromas of dried fruit, honey, and perhaps a hint of truffle, evolving into a complex palate with lingering minerality. 【 A rare testament to Montrachet's aging potential from a challenging vintage 】. 🥂 This is a wine for a very special, intimate occasion, perhaps a milestone anniversary or a quiet celebration among true connoisseurs. It's a contemplative wine, best enjoyed when it can be the star of the evening. Serving Advice: Given its age, this wine will be fragile. Stand the bottle upright for several days before serving to allow any sediment to settle. Handle with extreme care, as old corks can be brittle. A Durand opener or similar two-pronged cork puller is highly recommended. Decanting is generally not advised for very old white wines, as excessive aeration can cause them to fade quickly. Serve slightly chilled, around 12-14°C (54-57°F), in large Burgundy glasses to appreciate its delicate aromatics. 🍴 Pair with refined dishes that won't overpower its delicate nature. Think pan-seared scallops with a light cream sauce, roasted turbot, or aged Comté cheese. Avoid strong flavors or heavy sauces.
