FEATURES
🏰 The 2003 Le Parde de Haut Bailly, from a challenging yet ultimately rewarding vintage, is a 【powerful, fruit-driven Bordeaux that has aged beautifully, defying expectations of rapid maturation】. This wine exhibits a deep ruby/purple color and a sweet perfume of lead pencil shavings intermixed with red and black currants, cherries, and forest floor. On the palate, it's welcoming and engaging with brambled blackberry and raspberry fruits, a silky texture, and a fresh lift on the finish. Despite the warm vintage, it remains surprisingly fresh and lively, with elegant, classic Bordeaux characteristics and a balanced style that continues to evolve.
🍴 This medium to full-bodied red pairs wonderfully with roasted lamb, beef Wellington, rib steak, or fine game. Its evolving tertiary notes of exotic spice, turmeric, saffron, and cumin also make it an interesting match for dishes with similar aromatic profiles. Consider it with rich stews or aged hard cheeses.
🥂 An excellent choice for a special dinner party, a gathering of Bordeaux enthusiasts, or a celebration where a mature, elegant red wine is desired. It's a wine that tells a story of a challenging vintage overcome by quality winemaking.
Serving suggestion for older wines: For a wine of this age, expect some sediment. Stand the bottle upright for at least 24 hours before serving to allow sediment to settle. Decanting is recommended to separate the wine from the sediment and allow it to breathe, but be gentle and monitor the wine closely. Check the cork and capsule carefully upon opening. Serve at cellar temperature, around 16-18°C (60-64°F).
BACKGROUND
Chateau Haut-Bailly is a historic wine estate located in Pessac Leognan on the left bank of the Gironde. There are 30 hectares (74 acres) of vineyards on a high, sandy ridge with lots of sandstone and fossils. Cabernet Sauvignon makes up the majority of the vineyards, but Merlot, Cabernet Franc and Petit Verdot are also planted here. Traditionally, these were interplanted, and a 4-ha (10-acre) plot is still planted this way. Following fermentation, Chateau Haut-Bailly is aged in cask for 16 months, with the proportion of new oak depending on the vintage. As well as the grand vin, the chateau makes a second wine, La Parde de Haut-Bailly, and a rose.
