The 1980 Chateau Pavie is a testament to the estate's long and storied history, with vineyards first planted by ancient Romans. This Premier Grand Cru Classé A Saint-Emilion, elevated to its current status in 2012, boasts some of the appellation's oldest vines. Wines from Pavie are traditionally aged for up to 24 months in new oak barrels.
Expect a beautiful mix of red cherries, iron, graphite, and a hint of tobacco. This medium-bodied wine offers plenty of acidity and some light tannins on the finish. While initially presenting as classic old Bordeaux, it transforms with food, revealing a more pronounced core of fruit. Further tasting notes include cherries, blueberries, blackberries, prunes, roasted coffee, and oak, culminating in powerful yet refined tannins, exceptional richness, and magnificent length.
This mature Bordeaux pairs wonderfully with beef and venison. Specific recommendations include filet mignon de chevreuil, marcassin aux cèpes, and gigot de sept heures. It's particularly delightful with lamb.

This 1980 vintage is an excellent choice for celebrating milestones or as a cherished birth-year Bordeaux. While past its absolute peak, it remains a pleasant and rewarding drink, especially when accompanied by food. For older wines like this, very little decanting may be needed, just enough to gently separate any sediment. Old corks and capsules can be fragile, so handle with utmost care. When serving, consider a gentle decanting to remove sediment and allow the wine to breathe, but be mindful not to over-aerated very old wines, as their delicate aromas can dissipate quickly. Serve at a cool cellar temperature to preserve its nuanced character.
